Learn the foundations of beautiful, flaky pastry in this hands-on pastry class focused on classic pie-making techniques. We’ll start by making flaky pie dough from scratch, covering essential skills like proper mixing, resting, rolling, and handling for tender, flaky results every time. From there, you’ll put your dough to work creating a berry lattice pie, learning how to roll, fill, and weave a traditional lattice top that looks impressive but is completely approachable. We’ll also cover tips for working with fruit fillings, preventing soggy bottoms, and achieving a perfectly golden bake. At the end of class, your pie will be fully assembled and ready to bake at home, or you can freeze it to bake later. You’ll go home with clear baking and freezing instructions, so you can enjoy a fresh, homemade pie whenever it suits you. This class is ideal for beginners looking to build confidence with pastry, as well as home bakers who want to refine their technique and learn classic presentation skills. You’ll leave with practical skills you can use again and again — and a beautiful pie ready for your oven.
Cancellation Policy
All class registrations are final sale. Due to limited space and preparation costs, fees are non-refundable and non-transferable within 72 hours of the class start time. Cancellations made more than 72 hours in advance may be transferred to another class, subject to a 15% service fee. The transfer must be requested within 7 days of the cancellation and applied to a class that is currently listed on the schedule and has availability. No-shows or late cancellations will forfeit the full class fee. If a class is rescheduled by the instructor (e.g., due to weather), participants will be notified at least 3 hours in advance and offered a new date or a credit toward a future class.
